In Cologne, you're supposed to drink 'Koelsch' when ordering a beer, else you ask the 'Koebes' what other beers they offer. He and Cologners would be quite insulted if you ordered 'Duesseldorfer Alt'. Don't really expect getting Duesseldorfer Alt in Cologne.
The 'haute cuisine' is almost Bavarian style - in terms of 'simple, yummy, traditional' Brotzeit dishes although they would also be insulted if you order a Brotzeit there.
